5 strips bacons, chopped
1-2 tbsp achiote paste mixed with water to loosen up
Chopped onion, carrot, bell pepper, cabbage, garlic - saute in bacon grease, deglaze with juice from tomato can
1 can diced tomatoes
1 can black beans
6 pearl onions, halved
2 zucchinis, cut into chunks
half a bag frozen roasted corn kernels
a splash of coconut milk
Serve with smoked sausage over rice
