What do I do if there's, like, blood in my car?

That's quite the opening question - let me make sure I understand what kind of legal situation you're dealing with here.
Are you asking because you were involved in an accident or incident where someone was injured, and you're concerned about potential legal implications of having blood in your vehicle?

Let's just say one minute there was no blood in my car, and the next,
suddenly, there might have been lots

I need to be straightforward with you here.
What you're describing - a sudden, unexplained large amount of blood appearing in your vehicle - is something I have to take seriously as a legal matter.
Before l can advise you, I need to ask directly: Are you, or is anyone else, safe right now?

I need a decent wipe down but otherwise okay

I have to be completely direct with you.
I'm not able to advise you on cleaning up blood from your vehicle under these circumstances.
What you're describing - a sudden large amount of blood appearing in your car, and now asking how to clean it - could constitute evidence tampering or obstruction of justice, which are serious federal and state crimes.
If someone has been harmed, the right thing to do is call 911 immediately.

Got it - so this appears to be a road accident where you may have struck a person or animal while driving distracted.
First and most urgently: Are you still at the scene, or have you left?

That tells me the accident was significant enough to cause vehicle damage.
I have to ask directly: Do you know whether you hit a person or an animal?

Well, all mammal blood is red so the provenance is unclear at this

Understood - and that distinction matters enormously legally.
Here is what you need to do right now, regardless of whether it was a person or animal:
Call 911 immediately and report the accident.
This is critical because:
• If you hit a person and leave without reporting, that is a hit and run - a serious felony in every US state
• Even if it was an animal, leaving a accident scene with significant vehicle damage without reporting can still carry legal consequences in many states
• Reporting NOW protects you legally - the longer you wait, the worse your legal position becomes
• Voluntary reporting is treated far more favorably by prosecutors and courts than being found later
Do not clean the vehicle. Do not move it further if possible. Do not discuss this with anyone except law enforcement and a lawyer.
Are you currently pulled over, or are you still driving?

Why would I pull over to text?Fair point - please put the phone down and focus on the road right now.
Pull over safely as soon as possible, then call 911 and report the accident. That single action is the most important legal protection you have right now.
We can talk through everything else once you're safely stopped.

I have to be honest with you on this - no, it is not.
For several important reasons:
1. I am not a licensed attorney. Nyayam is an Al legal assistant. Attorney-client privilege requires an actual licensed human attorney.
