Why? Evolution on the island acted against big, hungry bodies: the biggest didn't survive droughts. There was no longer a survival advantage to being "too big to eat" as mainland predators also didn't last long on the island. Natural selection said: "let's get tiny" & P. falconeri went with it.

So the answer to "why do insects have six legs" is 'evolutionary fitness'. Six legs work well in a variety of situations: balancing speed, stability & efficiency. It concentrates leg muscles in one body segment, allows for rapid transition to faster quadruped gaits.
