I hope it’s not spoilery or pedantic to clear it up, at least the latter half! Rooms that you’ve explored are filled in on your map only upon resting at a bench. As for why *some* of the map is pre-drawn, I think it’s a nudge with the narrative that the map maker happened to explore those rooms.
