I missed my connection back to Toronto due to thunderstorms in Chicago. The rescheduled flight is now delayed because they need to change a tire. They deplaned us passengers while they do that. But the plot thickened when a Chicago police car, ambulance, and then fire truck pulled up to the gate.

The air quality in the Air Canada lounge at Toronto Pearson Airport ain’t the best. Why does this still happen in so many public places when it’s clearly at odds with public health standards? (CO2 should be well below 1000ppm if we want to think clearly/avoid illness.) Don’t we all deserve better?

Abstract

We use an incentivized consumption measure to assess the impacts of watching a roughly 15-minute video about industrial-scale pork production on sustainable food consumption. We find that the demand for (more sustainable) plant-based meals increases by 252.7 percent while the demand for meat-containing meals decreases by 27.0 percent immediately after watching the video. Notably, these effects exhibit some persistence. Compared to baseline levels, we find that demand at a one-week follow-up is still 121.8 percent higher for plant-based meals and 13.5 percent lower for meat-containing meals. The video appears to have a particularly large impact on the demand for pork, with immediate and one-week decreases of 45.2 and 30.1 percent. We also observe smaller yet still significant decreases in the demand for other meat products, with immediate and one-week reductions of 24.0 and 10.6 percent, suggesting that information about industrial-scale pork production can affect preferences for other types of meat. Overall, the video appears to be quite effective in promoting plant-based eating compared to others tested in the literature. Even so, the relatively low baseline popularity of pork compared to other meats in our sample suggests that the impact of the video may be limited by its focus on pork, raising the possibility that a broader portrayal of industrial meat production could be even more effective in promoting sustainable food consumption.

Today I learned what I call butter tarts are "Canadian butter tarts" and apparently they are part of my region's culture

Cultural identity
Butter tarts are an integral part of Central Canadian cuisine and are objects of cultural pride of many communities across Ontario and other provinces in central Canada.[14] This cultural and community connection with the tart has spawned butter tart themed tourism such as "Ontario's Best Butter Tart Festival" in Midland, Ontario, the Butter Tart festival at Muskoka Lakes, Ontario,[15] the trademarked "Butter Tart Trail" at Wellington North, Ontario, and the "Butter Tart Tour" in Kawarthas Northumberland, Ontario.[16] The two competing associations have since resolved their dispute, called "The Butter Tart Wars" by Canadian Living,[17] through the mutual agreement to modify "The Butter Tart Tour" to "Kawarthas Northumberland Butter Tart Tour".[18] The first Kawarthas Northumberland Butter Tart Tour Taste-Off was launched at the Flavour Festival in Peterborough on Sunday, April 28, 2013, where four bakeries were crowned winners by a panel of celebrity judges.

Ontario's Best Butter Tart Festival and Contest is an annual event held in Midland, Ontario drawing over 60,000 attendees for the one day event.[19] The contest portion of the festival attracts bakers from across Ontario, and is Canada's largest butter tart–themed celebration, with over 50,000 tarts sold in the festival market in 2014, and has grown to over 300,000 tarts sold in 2025.[20]

National Geographic recognized the significance of the butter tart in an article on Georgian Bay, Ontario. In October 2013, referring to a stand in Wasaga Beach, they stated that "It's the homemade Canadian butter tarts – flaky crust with gooey pecan filling – that set this place apart from other lakeside ice cream stands."[21]

The production of butter tarts in Canada slowed after a flood in Quebec, in April 2019, striking a major production centre. Global News reported the Vachon bakery in Sainte-Marie-de-Beauce had to be evacuated after a long-term flood…
