I'm no civil (?) engineer but why would you place a massive trafffic light pole RIGHT IN THE MIDDLE of the line where people on wheels will be going? This is brand new!

We kinda did for a little while 🥲. (I seem to read a lot of graphic novels huh)

To think that it used to be normal? This was in a graphic novel published in 2018

The AUDACITY of a white dude with a heavy non-NZ accent telling me to "go back to your country" when I call him out for riding his motorcycle in the cycleway. He was previously mounting footpaths to circumvent red lights, while also running other red lights before turning into the cycleway

I just read some tips from this book I picked up at the library last week. Making fluffy bread is something I’m still learning to master too 😩
SPECIAL EQUIPMENT
Stand mixer + dough hook

CHALLENGES
Kneading the dough with a dough hook until it is smooth and homogeneous.Without an electric mixer, this will have to be done by hand.

USEFUL TIPS
Use bleached or unbleached flour with a low protein level of around 9 to 10 percent for very soft baos, or 10 to 11 percent protein for a good balance between softness and elasticity. With higher protein levels, you will lose softness. Although the dough will be more elastic in this case, it will be more flavorful. For the gua baos, use medium-protein flour. Since the dough is filled like a sandwich, it needs to hold up to the filling and will have a little chewiness. It is all a matter of taste and personal preference!

USEFUL TIP
For the gua baos (page 242), you can add 1 teaspoon of salt to the dough with the other ingredients.

VARIATIONS
As with dumpling dough, you can customize it by adding chopped herbs or spices (paprika, chile powder, etc.) when kneading.
