Been meaning to make these for a while after watching the guys at Fallow do them. Deep fried corn ribs with a Southern Friday Fish spice mix; I already had some prepped from frying catfish. Awesome and now on my must haves for BBQs.

BBC's Saturday Kitchen Live just had someone prepare the worst pork schnitzel I have ever seen. Didn't cut the fat off the chop, didn't bash it thin enough and no soufflieren. It was at best a pork escalop, but calling it a schnitzel. Nein! nien! nein! This is what it should look like.

I have been hand making pasta for over three decades. But last night was the first time I made durum wheat dough with just water, so that I could make vegan ravioli stuffed with whipped tofu ricotta and a mushroom duxelles.

Seems to be a lot of chatter about sauerkraut. But how many people know how to prepare it properly with onion, apple, carraway seeds and or juniper berries? Because then it isn't a diet but a dish.
