Love this recipe, but I have to chime in with our current favorite for serving with roasted potatoes, steaks, etc. No recipe per se, but it‘s roughly 2 parts sour cream, 1 part mayo, up to 1 part horseradish (ymmv), salt, white pepper, and vinegar to taste. Not as “clean,“ but hard to stop eating!

You’re right to point that out, and I’m pretty sure late summer is not the best time to harvest it. This stuff is pretty crazy though… hotter than any batch I’ve made/brand I’ve tried. The label does not mention oils or extracts. Maybe there’s a special processing technique?

We have been craving horseradish too. Last weekend, we impulsively drove down the Columbia River Gorge with one purpose: acquire a jar of insanely hot “Exit 44” horseradish in Cascade Locks. We often grate up horseradish from our garden but it’s just not as hot. I think they’re using an extract (?)

Exactly. No roux-making stage, no “Cajun trinity,” no garlic, no cayenne, no andouille. I’m sure some folks prefer a minimalist gumbo, but we want more than a thin chicken soup with a soupçon of disintegrated rice. We fixed the gumbos in our 1997 edition and have improved on them further since.

This is a perfect example of why we keep updating the book. The amount of safrole in filé powder is minuscule. It’s a harmless ingredient. Another reason: the gumbos in our latest edition are much, much tastier.

I was wondering what the modern version of 1 of my cookbooks looks like. Thanks to my local library, I now know the difference between 1975 & 2019 @joyofcooking.bsky.social. I'm not saying you should put it on your Christmas wish list, but I wouldn't mind finding it under my Christmas tree.

With all due respect to the Campbell’s Company, our tuna casserole recipe in later editions (1997 onward) is much better. It’s a little extra effort, but not as much as you might think.

Perhaps the most "ride-or-die" quality about apple dumplings: we've been telling people how to make them since 1931. All nine editions have this recipe, but you'll find it in the 2019 on page 688.

Our recipe pick for this week does not fall neatly in either category. We did not grow up eating apple dumplings, nor do we bake them when we're feeling low, but they are very old-timey and deeply comforting to eat. We tested the recipe ~8 years ago and have been making them ever since.

Hmm, we're not super familiar with current offerings. David Leite's "The New Portuguese Table" is great. There's a big Phaidon book with 550 recipes. This old-school tome looks like it's worth checking out. Very $$$ for a hard copy, so maybe borrow from @archive.org first archive.org/details/trad...

I appreciate the context! It’s a very polarizing dish, and lots of folks like to hate on it just because it does not conform to their definition of “chili.” I have fond memories of Skyline, but haven’t been in decades. I make my own, using our recipe, and I’ve never had an allspice hangover 🤷‍♂️

I can personally vouch for this one! The recipe's changed slightly, but that citrus custard filling is nice. Never tried it with the filling and the chocolate icing but what could go wrong?!
