New England Clam Chowder
Old-fashioned cooks discarded the pork scraps, but they add a savory touch to the chowder.

Put in a deep pan
1½-inch cube salt pork, diced fine
Cook slowly until the fat melts and the scraps are crisp and brown. Remove the pork scraps and set aside so they will be crisp when they are added. Add to the fat
1 onion, chopped fine
Cook slowly until the onion is golden.
Put into the pan in layers 3 cups cubed potatoes
1 quart shucked chowder clams
Sprinkle each layer with Flour, salt and pepper
Add
2½ cups boiling water
Simmer until the potatoes are tender (about 20 minutes). Add
4 cups hot milk
4 tablespoons butter
Salt and pepper to taste
***continued in next photo***Sprinkle pork scraps on each bowl of chowder. Serves 8 generously.

GREEN BEANS WITH ONIONS AND BACON
1½ Ibs. green beans
½ teaspoon salt
3 slices bacon, cut finely
1 cup chopped onion
Pepper
Paprika

Wash and string green beans; cut lengthwise in three or four strips and then once crosswise. Cook rapidly until just tender in just enough boiling salted water to cover, about 20 minutes. The liquid should be practically all evaporated by the time the beans are tender and will require no drain-ing. Meanwhile pan-broil bacon over low heat, adding onions when bacon is half done. Heat together until bacon is done and the onions trans-parent. Add the beans, season with salt, pepper, and paprika and serve hot. 5 servings.

ESCALLOPED APPLES
2Ibs. tart cooking apples
3 tablespoons butter
½ cup sugar
Peel, core, and thinly slice the apples. Arrange apples in 3 layers in a buttered casserole, sprinkling each layer with sugar and dotting with but-ter. Cover the casserole and bake in a 350° F. oven for 40 minutes. Serve hot or cold. 5 or 6 servings.


FRIED APPLES
Wash, core and slice into rings or quarters, but do not peel, 2 pounds
of tart cooking apples.
Place them in a heavy skillet in which 3 table-
spoons fat have been melted. Butter, or bacon, ham or pork drippings, give the apples a good flavor. Add ⅓ cup water, cover and cook until soft (5 to 10 minutes); then sprinkle with sugar, cover, and cook over low heat until apples are delicately browned on under side. If over-
cooked the apples will fall to pieces.
Lift out carefully with a pancake
turner. Serve hot. 5 servings.

CORN CHOWDER
2 slices bacon
2 slices onion
1½ cups diced potatoes
2 cups fresh corn, cut from cob, or 1 No. 2 tin cream style corn
3 cups hot water
3 tablespoons butter
1 cup evaporated milk
2½ teaspoons salt
Dash black pepper

Chop bacon and onion coarsely and put into soup kettle; cook until onion is soft and bacon done. Add potatoes, corn, and water, and cook until potatoes are tender. Add butter, milk, and seasonings; reheat to boiling and serve piping hot. 5 servings.

Crêpes María
A modification of Italian manicotti. If you prefer, cook and drain packaged manicotti, then fill and bake in the same way.

Make French Pancakes (p. 305). Mix
   1 pound ricotta or dry cottage cheese
   1 cup chopped cooked ham
   2 eggs, well beaten
   3 tablespoons chopped parsley
   ¼ cup grated Romano cheese
Spread on the pancakes. Roll up and put close together in a baking dish. Mix 
   2 cans tomato paste
   2 cups water
Pour over the pancakes. Sprinkle with ¼ cup grated Romano cheese
Bake about 30 minutes at 350°. Serves 6.

STEAK AND GREEN PEPPERS
8 Servings

Cut into ½-inch strips:
   2 Ib. round steak, ½ inch thick
Combine:
   ¼ cup soy sauce
   1 cup beef bouillon
   2 cloves garlic, mashed
   ½ teaspoon ginger
Pour this marinade over the meat and refrigerate covered 2 to 12 hours. Drain meat, discarding the garlic and reserving ½ cup marinade. Dry meat strips on paper toweling. In a large skillet sauté meat until light brown in:
   3 tablespoons vegetable oil
Add heated reserved marinade and:
   1 cup boiling water
→ Cover skillet and simmer meat about 45 minutes. Add:
   3 large green peppers, cut into ½-inch strips, seeds and membrane     removed
   (1 cup sliced water chestnuts)
Simmer 15 minutes more or until meat is tender.
Mix until smooth:
   3 tablespoons cornstarch
   ¼ cup water
and gradually stir this mixture into skillet until gravy has thickened slightly. Serve with:

Norwegian Butter Cookies

Cream thoroughly
   ½ cup butter
Add
   2 hard-cooked egg yolks, pressed through a sieve
Beat in
    4 cup sugar
Add
   1 cup flour
   ½ teaspoon lemon or vanilla extract
Mix well. Shape and bake (see Cooky-Press Cookies, above). 
Makes about 40.

Beef Hash #2 from The Modern Family Cookbook by Meta Givens published in 1943. 

I made a few minor changes to the orginal recipe.
1. 2 strips of precooked bacon, chopped
2. a little garlic seasoning
3. I used lactose free fat-free milk
4. A little Swiss Gruyère melted on half.

SLOPPY JOES

Heat in a skillet:
2 tablespoons butter
Add and sauté:
½ cup minced onions
½ cup chopped celery
½ cup chopped green pepper, seeds and membrane removed
When these are limp, add:
1½ Ib. ground beef
Cook and stir until meat is lightly browned. Add:
½ cup chopped mushrooms
4 tablespoons chili sauce
½ cup water
Season to taste
Simmer uncovered over low heat about 15 minutes until thickened enough to spoon onto:

8 slightly toasted sandwich buns

BEEF HASH No. 2
2 medium onions, sliced
2 cups diced left-over beef roast or pot roast
2 tablespoons bacon drippings
4 medium-sized cooked potatoes
Milk
Salt and pepper to suit taste

Sauté onions in bacon drippings until soft. Add potatoes, cut in small dice, and beef; add just enough milk to moisten, and seasonings. Mix well, cover skillet and simmer until under side of hash is well browned.
Slide hash onto a hot platter and garnish with parsley. 5 servings.

SPLIT PEA SOUP
½ ham bone
1 cup green split peas, soaked 2 hours in 1 cup water
1 quart water
1 bay leaf
1 medium tomato, peeled, or ½ cup canned tomatoes
1/8 teaspoon celery seed
Pinch of thyme, if desired
1 2/3 cups evaporated milk

Use bone from which practically all meat has been removed. Crack bone and put into soup kettle; add water, seasonings, soaked peas and tomato. Cover and simmer about 2 hours. Remove bone and strain soup, pressing peas through the sieve. Stir in the evaporated milk and re-heat.
If desired, thicken by adding 2 teaspoons flour blended to a smooth paste with cold water, and continue stirring until soup comes to a boil. Serve steaming hot. 5 generous servings.

Honey Bread
(Spice Bread; Pain d'Épice)
Long beating makes the fine texture which distinguishes this bread, the famous French pain d'épice. Add 1 tablespoon rum to the mixture, if you like.
Cut in thin slices, spread with unsalted butter, and serve with tea or coffee.

Sift into a mixing bowl
   2 cups all-purpose flour or half rye flour
   1 teaspoon baking powder
   1 teaspoon baking soda
   1 teaspoon salt 
   ½ teaspoon cinnamon
   1 teaspoon ginger
Add
   ½ cup strained honey
   1 egg, slightly beaten
   1 cup milk
Beat thoroughly, 15 minutes at the very least. If you have an electric beater, beat ½ hour. Spoon into a buttered loaf pan 9 by 5 inches, or into bread stick pans.
Bake at 350°, about 50 minutes for a loaf, 25 for bread sticks.

Coffee Cookies
Also delicious without the nuts.

Butter a cooky sheet. Set the oven at 350°
Cream together until very light
   ½ cup shortening
   2/3 cup sugar
   2 tablespoons instant coffee
Add
   1 egg, slightly beaten
   ¾ cup flour
   ¼ teaspoon salt
   ½ teaspoon vanilla
   ½ cup chopped nuts
Mix well. Put on the cooky sheet by tea-spoonfuls. Bake until the edges are firm and the tops dry (about 12 minutes). Remove from the tin immediately. Makes about 36.

EGGS FOOYOUNG WITH SHRIMP

Fooyoung is really a rich omelet made with additions of cooked vegetables, fish and meat.

Clean or drain:

2 cups bean sprouts

Heat:
A little vegetable oil
in a skillet and stir-fry, until translucent and
crisp:

1 minced slice gingerroot
6 chopped green onions
1 rib celery, thinly sliced
1 cup chopped cooked fish, shrimp or finely
diced cooked meat

Have ready and combine the above ingredients
and the sprouts with:

6 well-beaten eggs
1 teaspoon salt
½ teaspoon pepper

Heat an additional:

1 tablespoon vegetable oil

in another small skillet. Drop the above mixture
into it to form small omelets, golden brown on
both sides. Serve with:

Soy sauce

QUICK TOMATO SOUP

About 4 Cups
→ Simmer, covered, 15 minutes:
2½ cups canned tomatoes
¼ cup sliced onion
½ cup chopped celery with leaves

Strain and reserve the tomato stock. Melt:
2 tablespoons butter

Add and stir until blended:
2 tablespoons flour

Add, cook and stir until smooth and boiling:

2 cups Brown Stock, or canned bouillon
½ teaspoon sugar
⅛ teaspoon paprika
The strained tomato stock
Season to taste

and add, just before serving:

(1 tablespoon chopped fresh basil or ¾ teaspoon anchovy paste or a
dollop of whipped cream)

PINEAPPLE MUFFINS

2 cups all-purpose flour
5 teaspoons tartrate or calcium-phosphate baking powder, or 3/4 teaspoons S.A.S.-phosphate baking powder
½ teaspoon salt
¼ cup sugar
1 egg, beaten
1 cup milk
1 14-oz. tin pineapple pieces
1 tablespoon sugar
1 teaspoon cinnamon
¼ cup butter

Sift flour, measure, and resift twice with baking powder and salt.
Cream butter thoroughly, and blend in the ¼ cup sugar. Add egg and beat until smooth and fluffy. Add sifted dry ingredients and milk alter-nately, beginning and ending with flour and beating well after each ad-dition. Drop batter into well-buttered muffin pans, filling them about half full. Drain pineapple pieces and place one or two on top of each muffin, and sprinkle with a portion of the 1 tablespoon sugar and the cinnamon, mixed together. Bake in a moderately hot oven (400° F.) about 20 minutes, or until golden brown. Remove from pans and serve immediately.
15 medium-sized muffins. (Use left-over juice in beverage or dessert.)

Garden Special
This is a tasty basis for vegetable soup, or to use in a stew or casserole with hamburg or chopped meat combined with cooked rice, spaghetti or potatoes, or as a sauce with fish. See also Jellied Garden Special 

Put in a deep kettle
6 sweet peppers, green or red, cut in pieces and seeded 
1 quart diced onions
1 quart diced celery, coarse stalks and leaves included
1 quart water or tomato juice
Cook 20 minutes. Add
4 quarts ripe tomatoes, peeled and quartered
3 tablespoons salt
2 tablespoons sugar
½ teaspoon pepper
Bring to a boil and put into hot jars.
Process in boiling water 40 minutes for quarts, 30 minutes for pints. Makes 10 to 12 pints.

It was a bit chilly for my morning walk today. Fall is starting to settle in & it means pulling out some comforting soups. Nana's 1943 cookbook has this Spinach Chowder. With potatoes & onion mixed in and crumbled bacon on top this might be a good place to start our fall soup tour. Thoughts? 🍽️ 🍜
From 1943 The Modern Family Cookbook by Meta Givens

SPINACH CHOWDER
1 No. 2 tin spinach or 2 cups
⅓ to ½ cup sliced white onions
cooked fresh spinach
3 tablespoons flour
3 medium potatoes
1 cup evaporated milk
3 slices bacon, chopped
Salt to suit taste

Drain spinach, saving liquid, and chop. Peel and dice potatoes, and boil until tender in salted water to cover. Drain, saving water. Sauté bacon until done; then remove bacon from pan, add onions to drippings, and cook until soft and yellow. Blend in flour, add evaporated milk, 4 cup of spinach liquid, and 1 cup water drained from potatoes, and cook over direct heat, stirring constantly, until sauce boils and thickens. Add spinach, potatoes and salt; again bring to boiling point and simmer 5 minutes. Serve piping hot, with drained crisp bacon dropped on top of each serving as a garnish. 5 or 6 servings.

PEANUT BUTTER COOKIES
About Sixty 1½-Inch Cookies
For those who dote on peanut butter cookies, try these rich and crumbly ones. Use the greater amount of flour if your peanut butter is heavy in oil.

Preheat oven to 375°
•
Beat until soft:
½ cup butter or shortening
Add gradually and blend until creamy:
1½ cup firmly packed brown sugar
½ cup granulated sugar
Beat in:
1 egg
1 cup peanut butter
½ teaspoon salt
½ teaspoon baking soda
½ teaspoon vanilla
Sift before measuring and add:
1 to 1½ cups all-purpose flour

Roll the dough into small balls. Place them on a greased cookie sheet. Press flat with a fork, as illustrated on 705. Bake about 10 to 12 minutes.

570 CREAMED SPICED HAM IN BAKED HUBBARD SQUASH
½ Hubbard squash about
1 cup evaporated milk
22 Ibs.)
1 cup water
1 tin spiced ham (12 oz.)
1 teaspoon salt
4 tablespoons butter
Dash pepper
6 tablespoons flour

Scrape out seeds and fibrous material from cavity of squash and place upside down on a buttered baking pan. Bake in a moderately hot oven (400° F.) for 45 minutes to 1 hour, or until squash is very soft on inside when pricked with a fork. Meanwhile cut the spiced ham into ½-inch dice. Melt butter in saucepan; blend in flour, add the evaporated milk and water, and cook until mixture boils and thickens, stirring constantly to keep smooth. Add seasonings and spiced ham, and place over very low heat or over boiling water until ham dice are hot through. Remove baked squash to platter, pour creamed ham into cavity, and serve im-mediately. In serving, scoop out the tender meat of the squash along with the creamed ham mixture. Diced left-over chicken may be substituted for the ham. 5 servings.

PINEAPPLE SNOW
1 tablespoon plain gelatine
3 tablespoons lemon juice
¼ cup cold water
2 egg whites
1 No. 1 flat tin crushed pineapple
Pinch salt
¼ cup sugar
Water to make 1 cup liquid

Soften gelatine in the cold water. Drain pineapple; measure juice and add enough water to make 1 cup liquid. Heat to boiling, add softened gelatine, and stir until dissolved. Add drained pineapple and lemon juice.
Chill in refrigerator until mixture begins to congeal. Beat egg whites until stiff; add salt and gradually beat in sugar until very stiff and smooth.
Whip gelatine mixture and fold thoroughly into egg white mixture. Turn into mold rinsed with cold water, and chill in refrigerator until firm. Un-mold. Serve with Custard Sauce, if desired. 5 servings.

APPLE DELIGHT
1 tablespoon gelatine
1/8 teaspoon salt
¼ cup cold water
1lb. tart cooking apples
1 cup sugar
3 tablespoons lemon juice
½ cup water
¼ teaspoon grated lemon rind

Soak gelatine in cold water. Boil sugar and the ½ cup water for 3 minutes. Add salt and peeled, sliced apples (should be 3 cups) ; cover, simmer until tender. Remove from heat, stir in gelatine. Add lemon juice and rind; cool. Pour into mold or bowl; chill until firm. Unmold (320) and serve with cold Custard Sauce, cream or top milk. 4 servings.

Variation: To save sugar, substitute 1 cup sweet cider for the ½ cup
water, reduce sugar to ½ cup, and omit lemon juice and rind.

VEGETABLE PLATES

Any desired combination of three or more vegetables, cooked separately according to the directions for each and combined with plenty of butter, makes a good vegetable plate dinner. One of the vegetables should be potatoes, and the others should be chosen for contrast in color, flavor and texture. Suggested combinations are:

1. Cabbage wedges, sliced carrots, green beans, potatoes.
2. Spinach, small whole beets, small buttered onions, potatoes.
3. Braised celery, peas, carrots cut in quarters lengthwise, potatoes.
4. Cauliflower, broiled tomatoes, Zucchini squash or asparagus,
parsley potatoes.

Broiled bacon (544) or a poached egg (391) is an attractive garnish for any vegetable plate if desired. Cheese sauce (920) or white sauce (919) served over one of the vegetables adds interest and appetite appeal.

FRIED EGGPLANT AND ONION WITH CHEESE SAUCE

2 tablespoons butter
¼lb. sharp cheese, diced
¼ cup flour
1 medium eggplant
1 cup evaporated milk
2 small onions
1 cup water
6 tablespoons butter
¼ teaspoon salt
Salt to suit taste
Melt butter, blend in flour, and add liquids, stirring constantly while heating until sauce thickens. Add the ¼ teaspoon salt and cheese, stir until cheese melts. Cover and keep hot over boiling water while preparing eggplant and onion. Slice eggplant 3 inch thick and remove skin.
Peel onion and cut in about 4-inch slices.
Fry eggplant and onion in butter, using moderately low heat. Sprinkle with salt and cook slices about 4 or 5 minutes on one side or until delicately browned, turn, sprinkle with salt and brown the other side. Place eggplant and onion slices on a hot platter and pour hot cheese sauce over vegetables. 5 servings.

BROILED MARINATED CHICKEN
I. With Tarragon and Wine
4 Servings

Disjoint:
   2 broilers
Marinate the pieces at least 1 hour in:
   ¼ cup fresh or 2 tablespoons dried tarragon  leaves
   4 finely minced shallots
   1 cup dry white wine
Preheat broiler or grill. Follow the directions for:
    Broiled Chicken, above
basting with:
   Melted butter
and the heated strained marinade. If oven broil-ing, save some of the marinade to deglaze the broiler pan.
   Season to taste
and serve the chicken on a hot platter with some of the marinade poured over it.

BEEF BEAN POT

½ Ib. dried kidney beans or
    1 No. 2 tin canned kidney beans
1/8 Ib. salt pork, sliced thin
¼ cup chopped onion
½ Ib. diced or ground beef
1 No. 2½ tin canned tomatoes
3 teaspoons salt
1/ 4 cup chopped green pepper, if desired
1¼ cups water
Crackers or toast

If dried kidney beans are used, wash and soak them over night, then drain, and cook in enough boiling salted water to cover, for about 30 min-utes. Heat pork until some fat is released. Add chopped onion and ground or diced beef, and brown. Stir in drained beans, tomatoes, salt, green pepper, and water. Cover and simmer for ½ hour, or until the beans are thoroughly cooked. Serve hot on crisp crackers or toast. 5 to 8 servings.
If any is left over, it will keep well in a covered jar in the refrigerator.

Cleveland Dressing

Mix
1 teaspoon salt
½ cup sugar
1 teaspoon dry mustard
1 teaspoon paprika
¼ cup vinegar
Chill overnight in the refrigerator. With an electric or rotary hand beater, beat in slowly
1 cup salad oil
Beat until as thick as honey. For fruit salad.

Poppyseed Dressing. Use lemon juice in place of vinegar and add 1 tablespoon poppyseed.

HAM AND POTATO CASSEROLE
2 tablespoons butter
2 tablespoons flour
1½ cups milk
1 lb. ham, sliced ½ inch thick
Salt, if required
1 tablespoon bacon drippings
Dash black pepper, if desired 
6 to 8 medium potatoes, sliced thin

Pan-fry ham in bacon drippings until browned on both sides. Place in bottom of well-buttered casserole. Melt butter, blend in flour, add milk, and stir over direct heat until sauce boils and thickens. Add salt, if tenderized ham is used, and pepper.
Arrange sliced potatoes over ham, and pour hot sauce over them. Bake in a moderately slow oven (325° F.) until potatoes are tender, about 1 hour; cover casserole for first half hour, then remove cover for remaining time.
Either raw or cooked ham may be used for this dish

PORK CHOPS EN CASSEROLE

5 loin or rib chops
1½ tablespoons fat
⅓ cup diced green pepper 2 tablespoons hot water
Salt and pepper
1 No. 2 tin cream style corn

Brown pork chops in a skillet in the hot fat, and sprinkle with salt and pepper to suit taste. Mix corn and green pepper, and arrange in a buttered cassserole in alternate layers with browned chops.
Add the water, cover and bake 45 minutes in a moderate oven (350° F.); then remove cover and bake 15 minutes longer. 5 servings.

3 tablespoons mayonnaise
1 cup chopped celery

Peel orange, cut into 5 slices and place on lettuce leaves. Combine other ingredients, tossing lightly together, and pile on orange slices.

CORN RELISH

8 cups raw corn cut from cob
2 cups brown sugar, firmly packed
1 quart chopped cabbage
1 cup diced celery
4 tablespoons dry mustard
1 sweet red pepper, chopped
2 tablespoons salt
1 quart cider vinegar
1 teaspoon turmeric

Cut corn from cob deep enough to get full kernels, but no bits of cob.
Combine all ingredients except turmeric in a saucepan and bring to a boil; then simmer uncovered for 30 minutes, stirring occasionally. Add turmeric and cook 5 minutes. Pour hot relish into sterilized jars and seal.
Makes about 5 pints.

ESCALLOPED TOMATOES
1 No. 2 tin tomatoes or 4 large fresh tomatoes
¾ teaspoon salt
1 tablespoon sugar
2 cups fresh breadcrumbs
2 tablespoons butter
1 medium onion, chopped

Combine tomatoes with half the bread crumbs and stir in onion, salt and sugar. Turn into buttered casserole. Brown rest of bread crumbs in the butter in a saucepan or skillet, and sprinkle over top of casserole. Place in a moderate oven (375° F.) for about 15 to 20 minutes, or until hot through. 5 servings.
