Honestly? Worth it 🍝 Sausage and pepper pasta from last night that BURNED ME, recipe attached This is one of those nice "I'm just making some bullshit" recipes, I had peppers that needed to be used #rorynoms

-1 box of penne pasta (farfalle is also nice for this)
-1 pack of sausage of choice`**` (i get chicken and apple sausage), skinned and sliced thin
-2-3 medium onions (depending on how you like it), chopped
-2-3 bell peppers, sliced thin
-4 garlic cloves (or more, or less, i'm not your mom)
-1 6oz can of tomato paste
-olive oil
-white wine
-seasonings (salt, pepper, italian seasoning, garlic powder, onion powder, up to you)
-fresh parsley, chopped
-cheese of choice (pecorino or parm is best), grated fine

if you want a smooth sauce, have a blender or immersion blender handy. if you like chunky veggies, don't bother with that. blended sauce is a good way to sneak more veggies in if you have picky eaters

-get your pasta water going, salt your water
-`**`if your sausage is not already cooked like chicken sausages are, brown it off and set aside
-sauté onions and peppers in olive oil (or sausage fat) until soft. add garlic, sauté until fragrant
-add tomato paste and let it toast to cook out the canned taste, stirring occasionally
-deglaze with white wine, get up all the fond from the tomato paste
-add pasta water to thin sauce if you're gonna blend- blend with immersion or stand blender, be careful to not burn yourself like my dumb ass did, return to pot and add sausage back in, add seasonings, season to taste
-cook pasta til al dente, reserve some pasta water, add pasta to sauce and stir to combine. thin sauce with pasta water as needed to finish cooking pasta to desired doneness
-add parsley and cheese and combine, serve with more as garnish

What happened last night to the Rams does a better job than I do of illustrating WHY "judgment call" flags should be instantly reviewed by the league in New York. INSTANTLY! Anyone saying "It'll slow the game down" is fearmongering. Especially for calls that will take 30 fucking seconds to review.
