The interview I had that included lunch was at a company that serves lunch cafeteria-style to all employees. There were enough options to accommodate most dietary restrictions. I think they explained this when I scheduled the interview might even have asked about allergies, but it was ages ago.

The 9hr one offered a beverage at the start and a meal at lunchtime on the longer day. On the shorter end, I’d say it’s about 50/50. And if they didn’t offer by the end of the first hour, I’d ask for water.
