Found it! Something for everyone to hate! Looks like nothing for Colorado—I figured folks in Cheyenne would enjoy being part of Nebraska more? I used county lines so folks gets to keep some of their existing local identity. Idaho got Yellowstone—they do actually love the shit out of nature there.

I’m going to dream of the beautiful olive oil poached halibut* I had for dinner tonight at PiDGiN. I’m biased of course, but our seafood in Cascadia is always fantastic when thoughtfully prepared. *Served in a kombu umeboshi broth, with somen noodles, and tiny lotus root “sandwiches”.
