Food is my passion. Dietetics was my livelihood. But to this day, I still can’t resolve a question. Is it the food that makes a plate healthy. Or is it the nutrients? That picture by the way is me & my French market hat in Paris.

It is funny (and a little frustrating) how angry people are getting about the very small amount of land and water that data centers use. Agriculture uses extraordinarily large amounts of land and water! Data centers are not what's eating the earth!

This study supports “my side” of the food/climate debates. It confirms that organic/cage-free eggs are worse for the climate than factory-farmed eggs. Because they eat more of the earth! But as usual the truth is more complicated than “my side is right.” www.theguardian.com/environment/...

Tomato season in the Hudson Valley has been disappointing the last couple years. Then last week my local farm stand manager suggested I try a Black Krim. I never heard of the variety before. It was love ❤️ at first bite. The robust, earthy, umami taste is just what this tomato eater was craving.

What bothers me the most about advertising to children especially small children is that childhood is when taste profiles seem to get hardwired. Once that profile is set, it’s there for life. That’s why immigrants to this country keep their food habits a lot longer than language or other habits.

The 3 steps rationalize an intuitive process. It’s good advice for marketers illiterates. Sometimes using the head is the best way to start developing new habits. But the advice is useless for those whose food shopping is grounded in experience and seasonal traditional cooking.

Faced with competing claims & fuzzy evidence, I return to common sense - read labels, check ingredient lists, cook when you can, make nonjudgmental, practical choices that fit your lifestyle. Starvation is not an option. Without mechanistic evidence and a workable policy, it’s the best we can do.

What‘s left to buy if ultraprocessed food products are labeled? The math is brutal. Roughly 70% consumer packaged goods would carry the label. The choice is clear - cook or go hungry! I’m not being alarmist either. It’s reality if we begin to treat ultraprocessed as a primary axis of food choice.

Yes, saturated fat, added sugar, sodium, % Daily Value are listed on the label. But I look at food and food product labels from a cooks perspective. And from that perspective, those values are meaningless. I’m probably a minority of one here in the US but I’m all in on a non-judgmental UPF4 label.
