Bottom pan is full of water
The one above that is full of goulash
The steam thing above that fits to the lid
below (covered in foil and tented downward
for condensation reclamation)

In order to make a flat surface

And on that flat surface I put weight
(Just under a gallon of water in a mixing bowl)
So I can force contact against the bottom of
the pan while keeping the overall temp around boiling sort of
