Cocktail orange for breakfast. Also known as a mandelo, for “Mandarin + Pomelo”. All citrus are actually hybrids of mandarin, pomelo, and citron (chart via Wikipedia). I collected some links on the FoodWiki and learned about the UC Citrus Experiment Station. #FoodWiki #citrus

Jazzed my way through making a beef stew with lots of onions, red wine, and roasted red peppers. It’s similar to Spanish Chilindron, when I went to go look for recipes afterwards. I was thinking about paprika, but just added some tomato paste & Calabrian chillies right at the end. #FoodWiki

I made lasagna yesterday. Like most of my cooking, I just sort of winged it. I did buy some ingredients earlier in the week, including Italpasta Oven Ready Lasagna Noodles. Here’s the package recipe, also on FoodWiki along with notes on my own recipe.
A few simple ingredients come together to make this no-fuss, classic lasagna. The best part is that there's no need to cook the noodles before assembling. Just layer with the sauce and cheeses, bake and serve!&10;&10;Prep Time: 30 minutes Cook Time: 1 hour 30 minutes Serves: 8&10;&10;Ingredients:&10;&10;1 pkg (375 g) ITALPASTA Presto Oven Ready Lasagne Noodles&10;1 lb (450 g) each ground beef and ricotta&10;2 cans (each 680 mL) pasta sauce&10;2 eggs, beaten&10;1/2 cup (125 mL) grated Parmesan&10;1/2 tsp (2 mL each salt and pepper&10;4 cups (1 L shredded mozzarella)&10;Steps:&10;&10;1. In saucepan, brown beef; drain fat. Add sauce; simmer for 20 minutes. In bowl, stir ricotta with eggs, Parmesan, salt and pepper.&10;&10;2. Spread some sauce in bottom of 13 x 9-inch (3.5 L) dish. Top with noodles; cover with sauce. Layer with noodles, sauce, ricotta mixture and mozzarella; repeat once. Finish with remaining noodles, sauce and mozzarella. Cover with foil.&10;&10;3. Bake at 375°F (190°C) for 50 minutes. Uncover; bake for 15 minutes. Rest for 10 minutes before serving.

Found a German leek tart recipe that has a touch of sexism in the description. Apparently this is great to eat with wine from the region. And not only men like wine drinking! “The female sex also enjoys such pleasures, especially in this age of emancipation” foodwiki.bmann.ca/Lauchkuchen....

English:

The leek tart is not a sweet dish. It is a savoury dish and is therefore the right addition to a round of wine. Such a wine round is not limited to a male pastime. The female sex also enjoys such pleasures, especially in this age of emancipation. Leek tart really brings out any aged wine and encourages you to continue drinking. In this respect, its function is similar to that of the onion tart that you can get with new wine everywhere these days.

My code name is Max Umami. I use miso a lot to round out flavouring. Also a tube of anchovy paste. From Cook’s Illustrated Nov - Dec 2023.
Cook’s Illustrated Nov - Dec 2023, page 7, “Making Beef Taste Beefier”

Although beef is considered a prime example of savory umami flavor, it doesn't taste particularly beefy on its own. That's because the meat contains relatively little glutamate less than a strawberry has. Glutamate is the central umami amino acid, producing ultrasavory taste by triggering umami receptors on our taste buds. But if you add gluta-mate-rich ingredients such as miso and soy sauce to beef as we do in our short rib recipe, the meat can taste exceptionally beefy thanks to a synergistic reaction between the glutamate and inosine monophosphate (IMP), a compound in beef. The glutamate stimulates umami receptors on our taste buds while the IMP effectively holds the glutamate in place on the receptors, intensifying the umami experience up to eightfold when the compounds are present in equal amounts.

With the Win Full Ramen that I posted about, I’ve been making quick soups for lunch. Here’s pulled pork, 1 Tbsp gochujang, cherry tomatoes, carrots, & shallots. Finished with a splash of sesame oil. Spicy & flavourful, and in no way “ramen” other than the noodles!

I have been looking for a fresh Asian noodle source in Vancouver for a long time. I bought some Win Full Ramen at Donalds and made it for lunch today: the ramen was excellent. And Win Full Foods seems awesome: looks like you can pick up from their store in East Van.
Win Full Ramen - front of package. 4 bundles of ramenWin Full Ramen - back of package. &10;&10;Our approach is simple - for over two decades, we've used premium local ingredients to craft the perfect noodle products for our customers in both homes and restaurants. All products are locally made with pride.&10;&10;Ingredients: Wheat flour, water, egg, kansui, salt, tapioca starch, corn starch, calcium propionate, food color yellow.&10;&10;Cooking Direction: Prepare broth and garnish. Relays. ELWAY’S obviously. Given airport price markups vs steakhouse pricing, this was not bad. If the food prep was a little more thoughtful this would be great. But you can’t serve shitty tomatoes for $16.

Salad: tomatoes, especially the green ones, not ripe and flavourless. I didn’t eat the mozzarella slabs after trying some. Cardboard. 1/5 Steak: medium rare, maybe a little under. Nice salt level and flavour. Parts a bit chewy. 4/5 Carrots: really nice flavour. Some were too crunchy. 4/5
