Just so you know that I practice what I preach! Here I am using a Meater probe to ensure this Tri Tip roast is cooked to the perfect (and safe!) temperature.
A tri tip roast with a Meater temperature prove sticking out of it sits on a metal grill over a charcoal fire with smoke pellets added. A tri tip roast sliced after resting. The roast is sitting on a white cutting board with a fork in front and a chef’s knife behind it. The strak is dark brown on the outside and bright pink-red on the inside. The thermometer said 135F which is medium rare, but since this was cooked at 125F for 4 hours in an immersion cooker before finishing on the charcoal grill, it’s very tender.

Are you a grocer who wants to track the cold chain of your produce to make sure it is not making your customers sick? Our EatSafe platform powered by Annulet Origin tracking software can make this easy. Visit eatsafe.tech for more information.
An image of the Oregon Trail video games death scene in green monochrome. It features simple comouter graphics showing an ox pulling a covered wagon with mountains in the background. The text says “you have died of diarrhea lettuce.” Instead of the normal “you have died of dysentery.”
