My sister sent me videos of what her grandchildren are doing: Grand nephew (3) is playing with a Lego shockabsorber and exploring how the spring works. Grand niece (1) is dipping her binky in my sister's hot tea and dribbling it down her chin.

They just closed I-40 Westbound from Winslow and 87 South. We are now a parking lot and will fill up with big rigs as the night progresses. It's a good thing there are two big truck stops here. Too bad the third won't be completed until summer.

Speaking of eggs, I've been making a microwave cheat for soft boiled eggs. Melt a pat of butter in a bowl (10 to 15 seconds) swirl it around to coat the bowl most of the way up the sides.

Always astounding to me when a chef recommends substituting a less common ingredient for a more common one. I'm pretty sure if I were presenting a recipe for the record, I'd start with the less common ingredient and recommend the more common as the substitute. I can't imagine doing it otherwise.

So I just had a 3 egg fritatta with bacon, onions, peppers, tomato, and asparagus topped with a little cheddar. It was like 2 parts veg to one part eggs. The bacon and cheese were just seasonings. It was amazing and I am stuffed.

In an hour it will be the day & time that marks the 8th anniversary of my mother's death. Maybe that's why I haven't slept well tonight. 4 days from now on the 27th at the same time it will mark the same anniversary for my father. Finally we will mark the 3rd anniversary for my sister on March 1st.
