It just tastes better in the Fall. Our Wendy's-like chili with Yankee cornbread (jiffy) and fat baked potato (outside rubbed with olive oil, k salt and blk pepper, put foil on the rack that is beneath the rack your potatoes are on because they will drip, put potatoes directly on rack)

Smoke n Sanity Steakhouse Seasoning (for seasoning patties before grilling)
Hickory chips for propane smoker box
1 medium white onion, diced
1 green bell pepper, seeds removed, diced
2 jalapeños, seeds mostly removed
1 can (28 oz) whole peeled San Marzano tomatoes
1 to 2 jars (32 oz total) Zoup bone broth (plus water if needed to fill Dutch oven)
3 cans (15 oz each) black beans, rinsed and drained
3 cans (15 oz each) red kidney beans, rinsed and drained
2 tbsp cooking oil (avocado) or high-heat fat (for sautéing)

Seasonings:

3 tbsp chili powder

2 tbsp ground cumin

1 tbsp smoked paprika

1 tbsp garlic scape powder

1 tsp cayenne pepper (adjust to taste)

1 tsp freshly cracked black pepper

Lanning's bratwurst simmered in Budweiser, butter, and sautéed yellow onion, then finished on the grill. I toasted all but one bun just to try one right out of the bag. That was a mistake. Needed toasted. Cast iron. Dutch oven. Served with kraut (not pickled cabbage), the onions + Stadium Mustard

Smokai! I got the smallest smoke generator they had, and it works! You pour in your wood chips or pellets of choice, plug into an outlet, and use a lighter at the two holes on the side until it catches and smokes. smokai.com/en-us

It is important to have serious feast for questing. Meatball calzones: We made sauce and meatballs using Gina's recipe (Buon-a-Petitti, YouTube) my sourdough breadcrumbs and sourdough pizza crust at 56% hydration.

The cheese bread is just my sourdough pizza dough with string cheese inside, cut into long strips, and painted with garlic olive oil.

I looked it up, and this small frog 🐸 might be a gray treefrog. It would have hopped right into the house if the screen door was open. The cat was not interested in the frog after he sniffed it.

I have been getting some rise out of this recently. Rather than fermenting for time, I've been home so I can watch it and let it ferment until it's right. Tall boule!
A tall boule of sourdough bread sits on a wooden cutting board next to a tub of butter for scale. This is 12.5oz water,.75oz k salt, 4oz starter (100% hydration whole ground wheat berries), 1lb 4oz bread flour. Preheat Dutch oven with lid on for 1hr at 500 degrees F, put in boule and score, put lid on and back in oven, turning it down to 425 degrees F for 30min-32min with lid on, and then another 15min with lid off, still at 425 degrees F. Let it rest at least 1hr before serving.

Cast iron, Dutch oven. I settled on 300 degrees F for this chuck roast for about 5 hours, adding carrots and mushrooms for about 1-2 hours because they didn't all get soft. I used Zoup bone broth for the juice with various seasonings. Sourdough on the side, of course. Mashed potatoes, too!

I was using bread flour on the outside of the dough while I stretched it, but i used semolina flour on the outside this time. Wonderful. It gave the pizza little bumps all over it, enhancing more of the texture than flavor. 350g water 15g salt 15g olive oil 100g sourdough starter 500g bread flour

My concern w/ AI in schools: First, we need to get people comfortable with accepting what AI tells them as the truth or close enough. Then, we can charge corporations and gov't money to decide what words are displayed when you ask AI a question. Finally, we can have all the monies!

More Thanksgiving: A 4-cup Pyrex measuring cup makes a great gravy boat, and my Brod & Taylor bread proofer works great for keeping food hot, cycling on and off to keep the temp right. Use pots with lids for serving.

The Masterbuilt turkey fryer works just fine for chicken wings, too! I rubbed these in black pepper, k salt, smoked paprika, garlic powder substitute, cayenne pepper, baking powder, then fried. The seasoning pretty much stayed on! Made a sauce of butter, dis white vinegar, and the same seasonings!

Tossed around in a sauce of butter, distilled white vinegar, and the same seasonings. I was surprised that the seasoning survived the deep fryer, but it did. Crazy!

The masterbuilt turkey fryer honestly works. Indoor use is fine. That's a 14lbs bird in peanut oil. It took maybe 1.5hrs or something. It was fine. The white meat was not dry. I also used it for French fries. It worked well!

F-ing double ear infection that won't go away, despite antibiotics, so I made myself some comfort food. Mom Wilson's Canadian-style bacon, my sourdough toast, those blue eggs from the store (because they remind me of my old chickens' eggs) and French fries from peanut oil.

In the tower of Threshold, we found 1/3 of the cabal that had opened the portal to the Abyss so long ago: a wizard who had tried to stop Areelu once he fully understood the what the ritual would do. Areelu had turned this man into some flesh-warped creature, something akin to a giant slug. I took time to listen to his pitiful pleas despite the locust-born mages attacking us. With my Angelic True Speech, I understood that this deformed wizard wished for death, so I had Fighter oblige.

Sourdough everything bagels 🥯! When I found out that Salt 'n Sanity had a low fodmap everything bagel seasoning, I had to try it. For 12 behgs, 450g water, 20g kosher salt, 40g sugar, 200g starter, 900g bread flour
Living with irritable bowel syndrome sucks, but it was FAR worse before the VA hospital found and put me on the low FODMAP diet. Sadly, the diet calls for the elimination or moderation of many plants (some so moderated that you may as well not buy it anymore). Luckily for me, I found that I tolerate sourdough well enough (wish I found it sooner, like a lot sooner), and many others who are prescribed this diet started businesses to recreate some of the plant-based foods we lostAfter mixing the ingredients thoroughly, let the dough rise. Then, you can put it in the fridge or move on to cutting into 12 pieces and shaping into hoops. Let the hoops rise on parchment paper so that you can peel them off. Boil them in water with barley malt, one minute per side. Put the wet bagels on parchment paper-lined sheet panPreheat oven to 450f. Top your wet bagels. Oven them for about 20min or so. If they burn too much on the bottom, they could stick to the parchment paper. You could try corn dust. Wait maybe an hour to let the crumb set before slicing. Slice and freeze in a container or freezer bag. Toast them from frozen when you want one.

Freshly baked, these sourdough brioche buns must cool for an hour or more until they can be sliced because the crumb must set. New Pizza Sauce recipe: I tried this, and I like it. This is the sauce going forward. All the garlic/onion alternatives are an attempt to keep it lower in FODMAPs for IBS.
1 can (28oz) of whole peeled San Marzano tomatoes, 1 tbs garlic- infused olive oil, 1 tbs unsalted butter, .5 tsp garlic scape powder, 1 tsp Italian seasoning, a pinch of red pepper flakes, .5 tsp salt, .75 tsp green onion powder, and 1 tsp of sugar.

Korned* beef from Mom Wilson's, some purple cabbage (doesn't look red to me), and red potatoes (they are red in the outside), two cans of Guinness, and some green onion powder, black pepper. It was like 3hrs at 350f on the meat, then like 30min on the potatoes, maybe 35min w/ added cabbage

I left the 58% hydration dough from my sourdough pizza sit out for like 6hrs at room temp, but then I forgot it in the fridge for about 8 days! It had gotten swolled in the fridge, and it made the best pizza: 525f on a screen, bottom rack. Top rack broil to finish.

Our last day in The Midnight Isles, book 4 of Wrath of the Righteous Righteous adventure path: we survived. It could have gone better, but it could have gone much worse. Goodbye, purple archipelago.
A basement turned into a dungeons and dragons room, complete with mood lighting, a TV table, many battle stations, several monitors for displaying information, and a big TV for showing pictures to the players.

Wow, I did not need that unnecessarily high hydration dough at all! This dough is around 60%: 500g bread flour, 300g water, 13g salt, 13g olive oil, 100g Sourdough Starter. Way better! I used a third of the dough to make a meatball calzone! Could probably go as low as 55% and be fine.

Hot pockets, or calzones.. That's ribeye with green onion, mushroom, and green bell pepper with salt, pepper, garlic scape powder, thyme, SnS Steakhouse seasoning, and parsley fried on cast iron, wrapped in my Sourdough pizza dough, with provolone! I did a turkey, cheddar, and broccoli one, too.

Oops 😬 left it out too long! Sourdough noodles: 1.5 cups flour (most will work), 2 large eggs, 1/2 cup Starter. Works for beef/chicken and noodles, spaghetti, chicken noodle soup, etc. Roll it out. Cut it up. Boil them, or add directly to dishes with boiling broth.
