This is great. It's also my exact experience except that I've been doing this about 15 years longer than Mike. These days, I still think of myself as an AI researcher, but I hate what the field has become and every time someone tells me they do "AI" and it's all about asking the chatbot

There's a fennel, sausage, apple bake with taleggio that's amazing. We tend to use a whole pound of fennel sausage in it and I tend to slice up the fennel rather than cut it into eights, but the idea is there and it's fantastic

AI as a term goes back a long way, but it's always used in one of two contexts. Either as a reference to the whole research field, including computer vision, robotics, NLP, etc Or as a term used to raise money.

There's a very old joke in the field (dating back to the 90s at least) When we hire people, it's machine learning. when we do the work, it's logistic regression. And when we raise money, it's AI.

She then showed us how to break down the ham into more manageable pieces, including several 2# hams that we later cured and cooked (delicious!) and some extra meat and ground pork. But it probably took us a year between the great ham arrival and finishing off all of the meat

So now we have to (a) defrost a 30# ham and then (b) break it down because we are not going to brine nor cook 30# of ham in one sitting. We eventually found a local butcher/vendor who had a walk in where she could defrost the ham.

The day of delivery arrives and I start working with the farmer to unload the cut portions of a half pig when we get to the ham. The frozen ham. The 30 pound frozen ham. Fortunately, it fit in the chest freezer, unfortunately, it would not fit in the refrigerator

So slightly related - a couple of years ago we bought a half of a pig. We've done this before, but as we were looking through the cut sheet, my wife said that we should get the green ham. I countered with we should get two half hams...

Step 3 was to baste with a honey mustard soy and smoked paprika sauce. So, um, I used sticky fingers bbq sauce with soy sauce and smoke paprika

But because I had the "right" amount of salt in the ribs, I didn't want to boil. So I did my usual which is to sous vide the ribs for 24 hours. After which they looked like this

After a week in the cure, I had my bacon ribs. Step 2 is to boil for about an hour. I assume that both reduces the salt and causes the connective tissue in the ribs to break down.

My solution there was to get regular pork ribs and cure them for a week. As with pastrami and other cured meats, I used an equilibrium cure where the goal is to have enough salt/pink salt/sugar/water so that the end result with the meat is as salty as desired.

Last week, @beerfoodtravel.bsky.social put bacon ribs on the timeline and I've got to admit - I had never heard of them, but they sounded amazing. Of course, step 1 is to procure bacon ribs, which I've never seen in the states.

I just roll them out thinly. I'm not much of a measurer, but my crust this time was 1 cup each of all purpose, bread, and whole wheat flours; about a cup of warm water; several glugs of olive oil (maybe a third of a cup?), salt and yeast.

Sorry - American, we've got pork ribs in the freeze. Usually I cook them low for several hours with a dry rub of ground fennel, salt, and adobo pepper. Also recommended

Quick and dirty analysis... seems to correlate to median income
Scatter plot with the median price of a pint of beer on the y-axis and the median income on the x-axis. There is a regression line drawn that indicates that the price of beer goes up with income. The greatest outlier is New York with a high cost of beer and not as high median income.

Absolutely! But for a lot of work in R, it seems like the approach is to type in some magic commands that you don't really understand, get the results and then manually change other numbers in the next commands A good bridge between R and software engineering practice will be a huge help

I'll note that .34 wh works out to be a 250 w GPU running for 5 seconds (almost exactly). This sounds low for ChatGPT and also ignores the external costs of transmission, the receiving computer, etc that are rolled up into the Netflix analysis
