Today's iteration of the linked dan dan noodles recipe. One of my favorite dishes but this recipe is new to me. I only had dried spaghetti & cucumbers so that's what I used. redhousespice.com/dan-dan-nood...

Dan dan noodles made with spaghetti cooked in baking soda water. There are whole dried chiles, scallions, ground pork, & sliced cucumbers on the side instead of steamed bok choy. Americanized & also made with some traditional Chinese products.

Stepdad ate 1 slice of the cheddar jalapeno bread I baked for him & didn't say anything. It was a lot of work & it's just sitting there.

Woke up & made calls to remedy 2 appts that got fucked up thru no fault of mine. One is fixed, one awaiting a provider's help. I also sorted my prescription refill dates. A productive morning addressing bureaucratic fuckups but nothing to show for it except half the appts I had before I woke up.

I just have to brag about how accepting my cat is of my CPAP tubing & the air venting from my mask. A lot of people worry about how a partner would react to these things in bed. I feel so much love for this sweet creature who doesn't care if the tubing or air from the vents touches her.

Sourdough discard pizza topped with veggies. I should've baked the dough a bit longer before adding toppings. I parbaked with crushed tomatoes instead of baking the crust by itself. Wouldn't do that again, but it still tastes pretty good!
