Made spaghetti for dinner in the crockpot. Sauce features red beans, tomatoes, peppers, onions, and roasted eggplant, all pureed to creamy perfection. It tastes amazing. Gonna top with hot sauce and cheese and enjoy this feast. If you hate pasta cooked in sauce instead of water, no need to @ me.

Taking a virtual training right now on helping immigrants who have also faced domestic violence, and they literally just said not to use AI tools due to reasons of confidentiality. Anything you tell an LLM, even using a note taking service, might be discoverable. We're being watched. Be mindful.

Two housekeeping tips that made me feel like facepalming because so helpful & why didn't I think of that: 1)Don't struggle to fold fitted sheets. Take 1 pillow case. Gather fitted sheet, flat sheet, other pillow case. Cram all into pillow case 1. Now your sheets are matched & you can stack.

If you blend 1 c salsa with 1 can of black beans, drained and rinsed, and mix in 1 c of oat flour, then chill dough for 30 minutes. Shape into patties and bake on a pan with parchment paper (if possible) at 400 F, 8-10 minutes per side. These veggie burgers come out awesome.

I am seeing so many recipes that call for yogurt to be baked or cooked in a sauce. If you want the creaminess, temper it and stir it in at the end, so you don't destroy the live probiotics and beneficial cultures. Cooked yogurt does have nutrition, but in sauces? There is a better way.
