They all start out gray, yes. The data is then used to give it color in most instances. That said, you can go out and take pictures of some of these yourself and simply stack the images and change curves, saturation, and contrast to pull the colors out that would otherwise be hidden to the eye.

Doctored insofar as changing contrast, saturation, and the use of data from instruments to make the light that would otherwise be missed by the human eye visible. If your concept of space is that celestial objects are only interesting if they are based on visible light, you're in for a bad time.

As someone who messes around with Stable Diffusion and Flux, I'm kind of baffled at how easily people are manipulated by obvious AI art. It only takes a half a second of scrutiny and it'll become obvious how bad most of it is when done by amateurs. Inpaint if you want better results.
