Just finished a 35 day dry age on a prime ribeye primal cut. Butchered it into 1.75” steaks after removing the pellicle. Tonight we cooked one for three hours in a sous vide at 129.5°F and then seared it over charcoal. The result was phenomenal. This is my most tasty hobby.

So the lair comes with 3 acres of forest. Off on one side are a couple of apple trees we did not know about until recently. This year we picked them and there were about six grocery bags worth. We are now making apple pies. They are awesome.

I have 3 acres of property with prominent, very visible flag poles. I proudly display three flags, posted here. After many years, my American flag, evidently made by a lower quality manufacturer, has become faded and tattered. I’ve replaced it with a much higher quality sewn one now.
