It's a new to me technique. I used to just grate and go but when I do the hash browns in the oven, the centers go grey due to oxidation and I don't want that ghastly spud around me.

The hash browns are happening now. I parboiled russets yesterday to let cool in the fridge overnight before grating them this morning & then mixing with salt, garlic & onion powder, cornstarch and vegetable oil before making patties & bunging them into the oven.
