I had leftover mashed potatoes so I added an egg, flour & rolled in seasoned panko with parmesan & tossed the patties in the oven after a spritz of oil. this will be served with mixed greens, hard boiled eggs & tonnato. I was going to do Japanese curry (korokke) but this tuna sauce needs its day.
