#ResistanceRoots Today in history, 1906: Teddy Roosevelt signs the Federal Meat Inspection Act and the Pure Food and Drug Act, spurred by Upton Sinclair’s The Jungle and other “muckraking” journalism. Large meat packers fought these regulations, but ultimately used them to their advantage. /1

In this political cartoon, President Teddy Roosevelt holds his nose and uses a giant rake t clean up the "Meat Scandal." The caption reads, "A Nauseating Job, But It Must Be Done." Even before Upton Sinclair's The Jungle exposed the factories in 1906, the Beef Trust pulled off a massive corporate cover-up during the Spanish-American War. The giant meatpackers won a lucrative government contract to supply canned and fresh beef to American soldiers fighting in Cuba. To keep the meat from spoiling in the tropical heat without paying for expensive refrigerated ships, the companies treated the beef with boric acid, salicylic acid and formaldehyde — the same chemicals used by undertakers to preserve corpses. Thousands of soldiers became violently ill. More American troops died from eating this toxic, "embalmed" meat than from enemy bullets. The "Beef Trust" shifted the blame onto military logistics, buried the official investigation and kept their contracts.
