I mixed that in with 400g of sugar and 125ml of lemon juice, plus a tea bag of a couple of teaspoons of lemon pips for pectin. That goes on the boil for a while until it becomes jam. 130

The sugar cuts the acidity of the tomatoes. If your tomatoes are super ripe you won’t need much. 110

It’s super important to properly brown the meat, as this is where much of the flavour comes from. Repeat the exercise with another kilo of cheap mince.
