Neighbor gave us a lot of zucchini and I’ve already got a bunch pickled, so tried Scarpaccia - zucchini and onion cut very thin and mixed with a flour and cornmeal batter, and baked hard until crispy. Pretty damned tasty…

Scarpaccia (Italian Zucchini Tart) - thin slices of zucchini are salted and pressed to draw out moisture, then tossed with flour, cornmeal, Parmesan, and spices before they’re baked into a golden, crunchy tart.
