Made it to a few places for tastings, Florence, Celaeno, Latta. Realised I don’t like Rhônewines as much as I thought. Stopped by Cave B and Maryhill for a glass. The real stand out of the day was the petite Verdot which I had never heard of before. I’m going to save it for a high quality steak.

Fried hemp tofu. Blend hemp seeds and water, slowly simmer while stirring until it boils. Squeeze out the moisture in a tofu press. Cut it into blocks and season with soy sauce and garlic salt. So delicious. Like this could be an entree at a restaurant.

Made some invisible apple pie. Basically super thin apples baked in a sort of custard. I carried over orange zest from a different recipe and added an almond flour streusel on top. It did not survive the weekend. So good.

The invisible apple cake that disappears faster than you can make it. Its a one of a kind cake that super crispy on the outside and creamy on the inside!
SERVINGS: 8 PREP TIME: 15 MINS
COOK TIME: 55 MINS TOTAL TIME: 1 HR 10 MINS
EQUIPMENT
hand held mandoline
Large mixing bowl loaf pan
Wire rack
INGREDIENTS
3 eggs, lightly beaten
2/3 cup (157.73 ml) milk, slightly warmed
3 tos butter, melted
1 tsp vanilla extract
1/2 cup (62.5 g) flour
1/2 cup (60 g) powdered sugar
1/2 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
4 apples, (about 2 Ibs)
INSTRUCTIONS
Preheat your oven to 350 °F. Line a 9x5" loaf pan
with parchment paper.
2 In a large bowl, quickly whisk together the eggs, milk, butter + vanilla. And then also quickly add in the flour, powdered sugar, cinnamon, baking powder and salt and mix until smooth. Batter is supposed to be on the thin side.
(3) Peel, core and slice your apples REALLY THIN with a mandoline (L used Fuji apples but Honeycrisp or Pink Lady are great here too).
Add them into the bowl and mix to coat all in the batter. Transfer the apples only to the pan, a little at a time, gently flattening out any pieces that are sticking up. Pour on the remaining batter to the top of the loaf pan evenly. Transfer to the oven and bake for 50-60 minutes. Or until the top is golden brown.
4 Allow to set in pan for 10 minutes then transfer to a wire rack to cool for another 15 minutes.
Optional: sprinkle with a little powdered sugar and slice to enjoy.
NOTES
You may also like this Greek Yogurt Apple Cake
1. Batter is supposed to be on the watery and thin side.
2. The cake is supposed to have as custard texture.
3. You can use pears as long as they're thin slice and sweet.
4. Gluten free 1 to 1 flour can be used instead of regular all purpose.
5. Store leftovers in an airtight container in your fridge for up to 4-5 days.

Planning out my first wine tasting for my bday. This is all within an hour walk from our house. Way too many options. Going to take a half day at work and start hitting spots at 2pm. Then food and see a comedy show at another winery at 7. Should be a fun day.

Cleared out an area of the new property and found a small patch of mint. I accidentally pulled one with the weeds and decided to eat the top of it. My mouth started burning so intensely that I second guessed my confidence in the mint id. Confirmed it was spearmint. Just a very spicy spearmint.

Started developing a taste for kimchi as we try to add more fermented foods to our diet. This guy just ruined me on store bought. His kimchi is phenomenal. I already ate half the jar. It could practically be an entree. Super tasty without the sourness or strange texture of store bought. It’s crunchy

Did a little pantry cleanup at the cabin. We switched to sealed glass jars with desiccant packs inside to help keep things fresh. It also limits alluring scents that might invite unwanted guests.

Set up new cellular cameras on Sunday. We got lucky and a rare daytime coyote showed up. While coyotes come through multiple times a week, it’s very rare to catch them during the day.

Had some docile elk meander through yesterday. I took the opportunity to do a little exposure training with Ransom. He chased elk a couple times as a puppy and I’d really like him to coexist and ignore the elk like our previous collies did.

Making progress. Ransom is always super excited for walks but isn’t great about loose leash. I’m kind of training him in a round about way. We have a solid heel command now and I’ve transitioned that into a ‘follow’ command. I’m hoping I can get ‘follow’ instilled so he just follows on walks.

Prepped huge batch of chicken taco meat. Then several pounds of fried chicken. Last night I passed out for a couple hours after making a tandoori marinade. Got off the couch at 1:30am and cut nasty parts from several pounds of chicken tenders and mixed with the tandoori marinade. Im Chicken Rich!

Anyone else noticing trees producing tons of fruit this year? My apple trees are breaking branches. Pine tree bases are covered in devoured pine cones supporting a booming squirrel population. I’m guessing the weather triggered something in the trees.

After searching for shoes with a wider toe box, I narrowed in on Altras and Topo brands. The Altras were comfy but Rei happened to have an extra wide pair of Topos. I am impressed. Toes aren’t smooshed. Feet feel good and well supported. It’s almost a confidence boost walking without discomfort.

Surprise of the weekend. I found a handful of Coyote tobacco, my preferred smoking tobacco. These must of been from seeds I spread 3-5 years ago. We did a bunch of soil moving with a tractor and brought the seeds back to the surface in the process. Kind of neat.

Sniffer in action. Ransom didn’t see where the stick went so he started sniffing around. You can see the moment he locks onto the scent. We did nose work as a puppy and he happens to have a really good sense of smell.

I’m impressed with how well Ransom handles the river current. Although the water is moving fast, it’s not very deep and washes into shallows so I don’t have any safety concerns. The current works in my favor adding resistance training to fetch. Probably did 100+ throws over the weekend.

Coyote on Cow. It’s a tradition! I’m happy that the Coyote on cow sculpture in downtown Kirkland gets dressed up for every holiday. I also appreciate art that doesn’t necessarily make sense. Like why is there a Coyote on cow sculpture?
