Kimchi day today. I'll pack this either tomorrow or Sunday into my fermentation vessels (one E-Jen brining & fermentation container) and one traditional Korean Onggi.
2 large metallic bowls full of freshly made Bauchu Kimchi (napa cabbage kimchi) with spring onions, chives, conference pear (i couldn't find Asian pears) it's all mixed up with a paste of flour, water, garlic, fish sauce, etc, on a wooden counter top, ready to be packed into fermentation vessels. In my case, a traditional Korean Onggi and an E-Jen Kimchi fermentation vessel.

Day off today, so cleared out the raised beds a bit, took the cucumber vines down, etc. Now I've got another problem, but a positive one at least 🙂

They're not helping anyone make decent decisions by saying "if you don't have this in your kitchen it's bad for you." I've got all sorts of "chemicals" not many people would recognise the names of. I cook with them, they are not "bad" for you.

Just picking and drying my homegrown Sanshō peppers, this is from 2 plants (mine and my mum's, but she can't eat spicy foods) They smell gorgeous, like a mixture of peppercorns and grapefruit. Zanthoxylum piperitum is basically Sichuan pepper plant, which is a citrus tree, so that tracks.
A half sheet pan on a stove top, the stove is not on. It contains hundreds of Sanshō peppercorns which will dry on my windowsill, I've sorted most of the leaves out, I still need to sort out the seeds from the seed casings (which are the bits you eat in things like Mapo Tofu), Sichuan peppercorns. They smell incredibly citrussy.

My partner looked at me earlier and said, "Do you know what I really fancy?" "Shwarma?" I said "How did you know!?" she said. "Because I've been thinking about shwarma all morning" So we went to get shwarma from the local international supermarket. Everything is so lush, and it's only £5.50!

I usually ferment my kimchi in a ceramic Korean Onggi pot which is porous, but a bit of a pain to manoeuvre, and the top can go mouldier than I’d like, so I’m trying one of these which are also porous but air tight at the top. Very popular in Korea I believe.

The container is made from high quality durable polypropylene plastic mixed with 7-10% natural clay for optimal porosity (* clay content only for sandy brown colored containers). Like Onggi, the container has very fine pores which allow minimal air flow. This keeps the food fresh while preventing aerobic bacteria from thriving.
The simple yet brilliant design of the inner vacuum lid allows easy adjustment of the lid position according to the level of food.
So regardless of the amount of food, the container induces an anaerobic environment in which the beneficial bacteria (lactic acid producing bacteria) thrive and the crunchy texture and vibrant color are maximized. SERVES 4
75ml (⅓ cup) oil
200g (7oz) onion, roughly chopped
3 tbsp meat curry powder (if you don't have this, combine 1½ tsp chilli powder, 1½ tsp ground coriander, ¾ tbsp finely ground black pepper,
1 tbsp ground turmeric and 1 tsp ground cumin)
6 skinless, bone-in chicken thighs (cooking chicken on the bone enriches your final curry. Please never use breast!)
200ml (scant 1 cup) water
200g (7oz) canned chopped tomatoes or fresh tomatoes, roughly chopped
300g (10½oz) potatoes, cut into chunks approximately 4cm (1 ½in) wide
1 tbsp salt
1 tbsp white sugar
100ml (scant ½ cup)
coconut milk
MALAYSIAN CHICKEN CURRY
This is a dish that every Malaysian household will make in its own way, and this one is based on my mum's recipe. Malaysian chicken curry is mild-medium in terms of chilli heat, creamy from coconut milk, tangy from tomatoes, and best of all are the potatoes which have been cooked in the curry sauce. Any leftover sauce will go very well with leftover rice and a fried egg or two.
We often use ready-made curry powders, and my favourite brand is Adabi from Malaysia. have included a DIY version.
1. Pour the oil into a large saucepan over a medium heat and fry the onions for 5 minutes.
2. Add the curry powder, stir and carry on cooking for 3 minutes, reducing the heat a little to medium-low.
3. Add the chicken thighs and stir until all the chicken is coated.
4. Pour in the water and tomatoes. Increase the heat and bring to the boil, then add the potatoes.
5. Add the salt, sugar and coconut milk. Return to the boil, then reduce to a simmer for 30 minutes, turning over the chicken pieces every now and then. And it's as simple as that!
