Majora's Mask on Nintendo Music reuses the CD album released in 2000, so unfortunately these versions of the tracks simply weren't made with consideration for the Extended-Playback feature. Majora's Mask 3D also has a CD album that makes many of these tracks longer, so whenever they add that

Make sure you're on the latest version. All of the favoriting stuff is done in "Alarm Settings", and the daily time options are in "Alarm On/Off". Upon pressing the latter now, it should ask you whether you want to set individual times or not.

You can set a different time for each day of the week. Also regarding music selection, as of the latest update you can set specific alarms as your favorites and shuffle them (there's also a shuffle for every alarm regardless of game, which is what I typically use).

It has been announced that The Legend of Zelda: Majora's Mask will be added to Nintendo Music this week, presumably at the typical time. Note that Nintendo Today! appears to confirm that Majora's Mask 3D will not be included, meaning it should be added separately at a later date.

I think when the time comes we'll see them start with Super Mario Run and Fire Emblem Heroes, and then delve into their other mobile titles when they feel the time is right. Pocket Camp I also think would be after the other Animal Crossing games due it not having hourly tracks afaik.

It's inevitable iyam but I don't think the time is right just yet, especially for Mario Kart Tour. Adding it now would only bring attention to them shutting it down, and it's mostly reused songs from older games, a good number of which are not on NM yet, which I think they'll want to add first.

The recently released Pictonico is effectively that actually, it was even made by the same team it seems
