If that’s happening to you, you probably need to reset your Dictation history. Simple commands should take 3-4 seconds, max, from when you stop speaking to when Siri displays a confirmation. I tested and verified this myself yesterday. Here’s one (of several) examples:

I haven’t experienced that on my 17 Pro Max or my M2 Air. Simple requests that don’t require any additional context (“Remind me to pick up milk on my way home.”) are created immediately.

Not sure what you’re doing wrong, but you’re doing something wrong. Starting a timer is as easy as saying, “Timer, 10 minutes.” Reminders are just as easy and much more powerful than before: “Create a reminder based on my last message from Mary, due on Monday, repeat twice, mark as urgent.”
