I've mentioned previously that the Flayer Virus can't transmit easily amongst humans, except for circumstances that contaminate the blood. This is because the virus acclimates to the carrier's genes as it replicates, which is also why Flayed Ones aren't contagious to humans, since Necrons lack DNA.

Although it does grant him a remarkable healing factor, the Necrodermis requires material like to its host so it can repair their wounds. In cases such as Matthias, this triggers a dependency and urge to cannibalize. No amount of any other foodstuff in the galaxy could satisfy. Believe me, he tried.
