We are delighted to report that participants in our Veg Challenge made significant progress in reducing consumption animal product consumption! The full report is here: www.pdxveg.org/2026_report.
On the left is a 9 x 9 grid showing photos of a chicken, a cow, a pig, a school of fish, a turkey, a sheep, rabbits, goats, and ducks.

Over 300 people signed up for our July 2026 Veg Challenge, and we obtained 35 pairs of responses to our before and after surveys. We compared and plotted out these pairs of responses and found significant decreases in animal consumption that you can view in this report: www.pdxveg.org/2026_report.

The animal products that we asked about were chicken, turkey, fish/seafood, pork, beef, other meat, dairy, and eggs. We analyzed each of these individually and collectively. On the right is a plot of the results for all the animal products combined. Consumption per week of all these combined decreased from 5.50 to 1.50 servings (median) and 10.24 to 7.56 (average). This decrease was significant based on the sign test, which yielded a one-tail p value of 0.00038.

In this plot, each respondent was assigned one or two letters, and the before results are shown as red circles and the after results as green squares. We sorted the data by the lowest to highest consumption before the Veg Challenge. 21 of the participants decreased their animal product consumption (the green squares are below the red circles) and 4, one of which was off scale, increased their consumption.

We are always delighted by the delicious Indian cuisine served up by maruti-restaurant.com, an all-vegetarian family-owned restaurant in #PDX with many #vegan and #gluten-free options. The produce is organic and locally sourced, and the dishes are both authentic and contemporary.
The top left is the Pani Puri, a vibrantly flavorful and fun appetizer has 6 puri (small, round, hollow, crispy shells) that you crack open with the back of your spoon and fill with mashed potatoes and garbanzo beans mixed with Indian spices and then top with pani (mint water mixed with tamarind-date chutney). The top right is the Vegan Butter Chikn, which consists of tender, meaty plant-based chicken cooked with sautéed onions, fresh ginger, and jalapeños in a rich, brightly flavorful, velvety coconut milk-based tomato sauce with aromatic Indian spices. Served with basmati rice. The bottom left is the Organic Apple Avocado Salad, which consists of organic mixed greens with apple, avocado, diced cucumbers, and mango, sprinkled with Indian spice. We skipped the dressing because it contains honey. The bottom right shows the outside of Maruti Restaurant.

Japanese-inspired, #PDX-evolved bakaumai.com has some delicious #vegan options for a wide variety of ramen, both traditional and innovative, as well as small plates and bowls. Baka umai is Japanese slang for stupid delicious, and based on the multidimensional flavors, that’s an apt description.
The top left is the Vegan Mazemen, which consisted of broth-less ramen made with thick and chewy whole wheat noodles tossed in intensely flavorful double-smoked tomato paste and truffle oil. Topped with fried tofu, chopped red and orange bell peppers, sweet and tangy pickled cucumber and shiitake mushrooms, and cilantro. The top right says baka umai, Japanese slang, Stupid delicious. The bottom left is the Bento Bowl (vegan version), which consisted of crispy fried tofu, green onions, fresh cabbage, and a pickled veggie medley including shiitake mushrooms, cucumber, daikon, and onion, over a bed of rice. The bottom right is a view of the inside of Baka Umai on SE Hawthorne. There is also a second location called Baka Umai Ramen Den on NW 23rd.

Pizza Creature is a vegan-friendly food truck in #PDX that serves up wood-fired sourdough pizza and has a #vegan option for everything on their menu. 📸: Build Your Own Vegan Pie
This is a Build Your Own Vegan Pie. They have so many delicious vegan toppings for this. We chose their deeply flavorful house-made pesto base, luscious tofu-cashew mozzarella, creamy fluffy almond ricotta, roasted cremini mushrooms, hot and sweet Mama Lil’s peppers, toasted walnuts, and fresh basil on a pleasantly chewy crust with just the right amount of char.
