Had an eye-opening chat with Chef Moyo Odunfa from Atije about rethinking "African cuisine." Her insight: celebrate diversity, don't homogenise it. Colonial attitudes still shape Nigerian food choices. Fonio is called "hungry rice," as people believe traditional diets aren't healthy.
