I'm trying to tire out Little Man cause he was biting stepdad's toes, and he has sensitive feet because of a skin condition. I ALWAYS make sure to immediately stop play when the kitties attack my feet, (see how I yanked my leg away) so the older ones know but Little Man is still learning.

Time for another autumn #recipe! This one is for Pumpkin Scones (I have been told these might be too dry to be considered scones - keep in mind these are US scones, not UK scones) and I've included both the US measurements and metric for everyone else!

Pumpkin Scones

Servings 8
Prep time 30-60 minutes
Cook Time 15 minutes

Ingredients

270 g all purpose flour
¼ tsp salt
2 ½ tsp baking powder
¼ tsp ground cloves
¼ tsp nutmeg
1 tsp cinnamon
114 g butter, frozen and grated
113 g pumpkin puree
1 egg
100 ml heavy cream
95 g brown sugar
½ tbsp vanilla extract

For the glaze
57 g butter, melted
2 tbsp heavy cream
60 ml maple syrup
240 g powdered sugar

Directions

Mix your dry ingredients together with a whisk or your hands
Incorporate your butter - make sure it's VERY cold (you should freeze it for at least 30 minutes before grating it). Use your fingers and gently work the butter into the dry ingredients until everything is crumbly.
Add your wet ingredients and fold them in until everything is evenly mixed. It should form a dough!
Chill - wrap your dough tightly in plastic wrap and chill in the refrigerator for 30 minutes
Preheat the oven to 190 C
Shape - once the dough is chilled, on a lightly floured, clean surface, roll your dough out, but not too thin. You want about an inch to an inch and a half in thickness. Try to roll it as evenly as you can.
Cut your dough into 8 even triangles - like a pizza!
Bake for 15 minutes
Cool for 15-20 minutes
Glaze - drizzle your maple glaze over the tops and enjoy!

Pumpkin Scones

Servings 8

Who wants a tasty autumn #recipe? I honestly love this and it's pretty easy to make! I wanted everyone to be able to try so I used recipecard.io to convert the measurements - so if anything is weird/off PLEASE let me know so I can learn and fix it! Recipes typed out in full in alt text!

"Harvest Bowl
Servings: 4 | Prep Time: 10-15 minutes | Cook Time: 20-25 minutes

Ingredients:
1 bag spinach
1 sweet potato
260 g carrots
240 ml cherry tomatoes
180 g Brussels sprouts
2 tbsp olive oil
Salt and pepper, to taste
1 boneless, skinless chicken breast
1 apple
75 g feta cheese

For chicken:
470 ml water
120 ml white vinegar
1 tbsp salt

For Dressing:
45 g mayo
Juice from 1 lemon
1 tbsp maple syrup
Pinch of salt
1 clove garlic

Directions:
1. Preheat oven to 220 degrees C.
2. Prepare your chicken:
Place chicken in a medium bowl and fill with 2 cups of water, 1/2 cup white vinegar, and about 1 tbsp salt. Set aside.
3. Prepare your produce:
Wash everything well, then peel and cut sweet potatoes and carrots both into one inch cubes (if your carrots are thin, just do one inch thick slices).
Halve the tomatoes and Brussels sprouts.
Finely dice (1/4 to 1/2 inch cubes) your apple - you can peel it if you don't want the skin, or you can leave it.
Peel and mince the garlic.
Halve the lemon and squeeze juice into a bowl.
4. In a large bowl, combine brussels sprouts, sweet potato, tomatoes, carrots, olive oil, salt and pepper. Toss to combine.
5. Spread veggies out in a single layer on a baking sheet. Drain the chicken and place on a separate baking sheet. Roast veggies on top rack and chicken on bottom rack until the sweet potatoes are cooked through and the chicken is 74C - about 20-25 minutes.
6. Divide the spinach among four bowls (or food storage containers if this is meal prep). Top with roasted veggies, chicken, apple and feta.
5. To make the dressing, place all dressing ingredients in a blender. Pulse until smooth. Add water to thin the dressing if necessary.
6. Dress salads right before serving.
