Also, Asian markets here do carry dried yeast balls for making a drink called Jiu. It’s called nigorizake in Japan and is a sweet rice wine. It’s a fast ferment at room temps using the yeast ball as your starter which has both A. oryzae and S. cervisciae in it. Jiu is very tropical for a house wine.

Yes. Traditional sake making is a multi step process alternating between koji rice feedings and yeast feedings. Warm it up for kome koji rice for a few days, then feed with yeast and chill back down to lager temps.

Thank you. Your procedures for trapping yeasts is similar to mine. I use homemade sanitized jelly jars with agar plates up in fruit tree canopies for an overnight exposure. That, or use a still air box to roll fruit skins (plum, persimmon, citrus, pine needles, etc.) or material on the jar plates.

Sake uses kome koji (Aspergillus oryzae) to break down long chain carbs in rice into short chain carbs for yeasts to eat. Primary ferment is a multi step process of warming to feed with koji rice and cooling to lager temps to feed yeast.

I’ve sourced A. oryzae from koji rice to make homemade sake, alternating between Aspergillus and Servomyces cervisciae var. bayanus during primary at lager temps. It turned out well. Mineral water and cantaloupe flavors with a pale straw yellow color using Calirose sushi rice. Following.

She’d had a liver transplant which often causes diabetes. She could’ve been undiagnosed as well. Diabetes is just one complication of a liver transplant so I wouldn’t necessarily panic. I’m type 2 btw.
