Oh it was so great. I studied at, and lived in, Saint Andrews for a year on a university exchange and it was far enough away from home that I could just be me, and in such an amazing location. Plus it was a scholarship, which was the only way this poor farm kid could get away and see the world

When I sauteed the shiitake mushrooms I used too much butter intentionally, then removed the mushrooms once they were done and used the remaining butter and some heavy cream to reduce down into a thick cream sauce, super simple and carries a lot of umami. Successful experiment!
