Not that you’d have baking every day but often celebrations or appreciation days will take the form of a morning or afternoon tea. Also, morning and afternoon tea (with or without the baking) are an important break in the day where you can sit informally with colleagues to catch up over a cuppa.

Lamingtons are deceptively simple because the sponge is the star and can be tricky to cut into squares, coat in the cocoa powder or rasberry gelatine icing, and roll in dessicated coconut without the whole thing falling to bits or having dry, bland cake. A perfect lamington is perfect.

I think slices could be called bars but are a little different. Slices (or ginger crunch) often have a dense baked base (but not always) with a thick icing that sets on top. But I think bar is close enough that you get the idea. I think Golden Syrup is the key to the difference to NZ baking.

In NZ, tea is the evening meal. Morning tea and afternoon tea are the breaks at those times. We don’t have cucumber sandwiches. We might, if we’re lucky, have lamingtons and ginger slice.
