When a #Kölsch and an #Altbier share the same table, you know someone's risking a diplomatic incident. Cologne’s crisp Kölsch and Düsseldorf’s malty Altbier have been rivals for decades, much like the cities themselves. I prefer the latter, when I am visiting the region 🍻 #germanbeer #beerpolitics

Fun paper with serious background. A bunch of researchers explored the phase behavior of a simple - but notoriously unstable - cheese sauce. It's a complex emulsion (water, protein, fat, starch) that shows an unusual stability curve that seems designed to trouble cooks. 1/ (in german, paywall)
