We have an abundance of yellow squash and a family member who hates it so I made this. He cleaned his bowl with a spoon.

Creamy squash pasta with parmesan cheese. Cook seeded and cubed yellow squash in olive oil with onion and garlic until tender. Puree in blender with some broth. Return to pot and add shredded parmesan cheese and cook on low until melted. Season to your liking. Topped with basil or parsley.
