Yeah, I use cannellini. Either works but that's my preference. And I don't measure anything. Hehe. Just make sure you chop the escarole up enough. If I'm being lazy, I always regret not chopping it finely enough.

Also, when I make this, I get whole peeled garlic cloves from the local farmers market. It really cuts down on prep work if you have that option! It probably goes without saying that you should use good quality garlic for this, not "jarlic" or paste.

Correction: we were there for four nights. On the third, I was laying in bed with my eyes shut, trying to sleep. I had the overwhelming sense of being watched, like something was right by my face. I refused to open my eyes. I told it to get lost. Fourth night was giggles.
