There used to be a time when people would be like, "mind if I smoke?" And that was pretty much just like telling you that they were going to smoke in front of you because it would be rude to object to them smoking. People smoked in restaurants and on planes. Everything smelled like stale smoke.

This week's loaf. Hard white wheat berries for the modern grain, spelt for the ancient grain. 400 grams of wheat split 50/50. 1 tsp instant yeast, 1/4 tsp calcium propionate (ask me about rope spoilage) and about 2 cups hot water. 20m rise in the pan. 40 mins at 400F.
