Some lessons learned! 1. Just use the big pan. I started in a pan that was too small, which probably contributed to the issues with the potatoes. I ended up having to transfer to a bigger one midway, which only slowed everything down and left me with more dishes to do.

The potatoes didn't brown properly and the meat had more of a paste consistency than I wanted. Oh well. Like I said, it tasted good, which is fortuitous since I have two meals worth of leftovers 🤣

I'm cooking more these days, so I'm obligated to share the photos on the socials, so here's a corned beef hash I made for lunch. It's pretty ugly, but at least it tasted good.

I fired up the Wii and have been playing some DR MARIO ONLINE RX lately and now I very much want a Switch port of that. I realize there are already several flavors of DR MARIO on NSO, but that Wii version was pretty excellent.
