A large stock pot of vegetable-based soup

Leek and Lentil Soup

In a large stock pot, cook until very tender:
1 medium onion, diced
3 leeks, Sliced fine
4 cloves garlic, minced
11/2 tsp dried thyme
1 tbsp salt
~1/4 tsp fresh ground pepper ~4 tbsp bacon drippings

Then add, and cook another ~15 minutes until vegetables soften:
2 large carrots, diced
2 med parsnips, diced
3 stalks celery, diced

Add:
8.5 cups chicken stock
2/3 cup dry red wine
1 3/4 cups de Puy lentils
Bring to a boil and then simmer 1 hour

Finish with:
1/3-1/2 cup fresh squeezed lemon juice
Grated rind of 1-2 lemons

Leak and potato soup in a black slow cooker.

Leek and Potato Soup

In a saucepan, heat until softened:
2 tbsp butter
3 leeks, finely sliced
5 cloves garlic, minced

Transfer to a slow cooker, adding:
1 kg russet potatoes, diced
6 cups chicken stock

Cook until potatoes are nearly falling apart (~4 hours on high). Pulse very briefly with an immersion blender. Season with 1/2 to 1 tsp salt, 1/2 tsp ground pepper. Stir in 3/4 cup half-and-half cream. Serve with croutons or crusty bread.

Seriously, is there anything better than spending a day cooking soup(s)?

Cream of Celery Soup

Cook until soft:
2 tbsp butter
2 medium onions, minced
4-5 cloves of garlic, minced

Add, and bring to a rapid boil, then simmer ~20 minutes:
6 cups finely diced celery
6 cups chicken stock
1 tsp salt or to taste

In a saucepan, construct a roux by melting ~1/4 cup butter. Add ~1/2 cup flour and stir hard to evenly combine. Slowly add 2 cups whole milk, allowing the mixture to cook the flour, while stirring/whisking vigorously. Add the roux to the soup. Season with a generous pinch of nutmeg, 2 tsp sugar, 1/4 tsp fresh pepper, and continue cooking until creamy and celery is very tender.

Putting the garden carrots to good use today. #Recipe

Carrot and Ginger Soup

In a large pot, heat until softened:
3 shallots, diced
1 medium onion, diced
4 cloves garlic, sliced
~2 tbsp bacon drippings (or olive oil, if you're silly enough to not save your drippings. *glares*)

Then add:
~3 Ibs diced carrots
3-4 tbsp grated ginger
4 cups chicken or veg stock
1/2 cup dry white wine
11/2 tsp salt
1 tsp cinnamon
3 bay leaves

Bring to a boil and simmer ~40 minutes until carrots are thoroughly cooked. Remove bay leaves, then pulse with an immersion blender until smooth. Adjust salt to taste. Serve, garnishing with parsley, cilantro, toasted pine nuts, or crisp-fried onions. Tip: you can buy both crispy onions and ginger paste in bulk at most Indian grocers, making this an absolute breeze to whip together.

9 years of it, 7-9 hours every second night. She didn’t needle, tho — she had a central venous catheter because out of 8 grafts/fistulas they tried to create, all failed.

People in my apartment complex have classified Rosie as a “big dog”. I routinely get comments like “I’m scared of big dogs”. And in my brain she’s at best a medium sized dog, one of the smaller dogs I’ve had. … But then she chooses to sit on me in bed? And, yeah, I see what they mean.

Went up to Nopiming for the first time since the fire. It’s all like this, all of it. The entire park. Apocalyptic. It was so hot against the rocks that the blueberry regrowth was often crisped and dead, berries withered dry on browned-off stems.
