There should be lots of weird little things. Weird regional cheeses. Wine styles that aren't what Karen likes; don't make me live in a world that without white riojas, or teeth-enpurpling Eger wines. Salsa that varies with regions and the seasons! Things that aren't for me, but have their niche!
