La zi lobster. Usually this is la zi ji, a popular Szechuan dish made with bone-in chunks of chicken thighs. Instead there are chunks of quick fried lobster. This is lovely. At TANG in Durham, NC.

Some emergency surgery. Because the leg wasn’t even thickness, the inside was still too rare. So I separated the large muscles that weren’t done, halved them, and put them raw side down.
