Caramel apple pie! It's made with a very dark caramel, and takes at minimum two hours to cool! So I'll be up sooooo late tonight, but it'll be worth it for the deep, bold apple flavor, especially with how much cinnamon I packed in there.~ ^vvv^

Cinnamon babka! It's kinda like a cinnamon roll without glaze, but I JAM-PACKED it with cinnamon! I loooove tripling the cinnamon in a recipe, and it surely pays off here. Also, I love the artistry of the braids on the top! Not a fan of the topping the recipe had me put on top, but still tasty.~

Spiced pear berry crumble!~ Peeling and cutting 10 cups of pear was quuiiiiite the hassle, but very much worth it for this crumble! The blackberries are nice and flavorful, and the pear softened up beautifully! I bet I could've gotten away with tripling the spices, though.~ ^vvv^

Theeeeese are mocha meringue sandwich cookies with a milk chocolate filling! Despite being light, airy meringues, they actually carry the most impactful part of the flavor! It's very surprising that the sugary filling takes a backseat in the flavor!~ I actually used my meringue powder to make them.~

Mmmm, raspberry white chocolate rolls! I was curious about cinnamon rolls without cinnamon, and white chocolate being a predominant flavor, but the raspberry carries in these! The tartness mellows out the overwhelming sweetness, which is normally my least favorite part of white chocolate.~ ^vvv^

Whoa, surprise meal! We made Mongolian beef last night. The beef was so soft and tender that teeth would just glide right through it as though it were air.~ The sauce was a perfect blend of slight sweetness and overwhelming umami. It was great!~ ^vvv^

So I was really excited to bake this berry-topped coffee cake, and that had merit! This turned out GREAT!~ It's dry like all coffee cake is, but not overly so. Very light on cinnamon so all of those fresh berries can burst and shine with their tart sweetness. And a vanilla glaze on top. Mmmm!~ ^vvv^

Pacoca! A Brazilian peanut candy. It was really neat to make, even if the dough was incredibly sticky and tough to shape in the pans. After chilling, it was just pliable enough to cut and serve. It tastes great, too! Peanutty, and like eating cookie dough. I should've added some honey.~ ^vvv^

Okay, so it's also a bit egg-core! I don't know how I lapsed into this genre of frozen sweets, but here we are.~ Sherbet is great. Sweet, fruity taste. Nice, chilling cold. And a lower fat content than ice cream, which helps it melt faster. This is particularly good for those with sensitive teeth.~

I made the blueberry and lemon drop scones!~ Scones are always nice, and these ones come with a lemon glaze to prevent them from being too dry. A real tip is to use frozen blueberries instead so they don't dry out in the baking process!~ These are heavenly, and I'm gonna eat them all.~ ^vvv^

Happy Cinco de Mayoooo! I made tres leches! I put dulce de leche Kamora in it and it tastes really nice! It has a super soft, super moist texture, and the strawberries actually take a backseat to the sweet, faintly caramel-ey taste the cake itself has. I genuinely really like this a lot.~ ^vvv^

I made the little rum balls! They were no hassle at all. The hassle lied in the instructions instead! It mentioned warmed rum, and I could not find a single way on the internet to warm the rum. They were also a bit too pliable when coating, so the taste test will be tomorrow. I'll loosen up then.~
