Massive craving for #veg #lasagne last night, made GIANT 10 X portion jobbie; then me Mrs said she wasn't hungry so I need to invite nine ghosts for a sneaky lunch. Carrots and onions went in it too; grill-panned first to char/flavour, then roasted off. Fresh tomatoes for sauce + nutmeg béchamel + 🧀

#Vegetarian version of Full Irish I posted the other day. Our #AirBnb guests are non-dairy but egg-eating! Different breakfasts every day which is a challenge, carrot bacon for vegans, etc. This is: veg sausages, spinach, chilli tomato, baked mushroom, scrambled eggs, spinach, paprika spuds, toast.

Vegans for dinner last night so made a Beef, Mushroom & Guinness Pie using soya chunks soaked in stout & stock first, then a roux of mushrooms, porcini, Marmite, puff lid on top; colcannon with cabbage & spring onions, vegan butter, almond milk; homemade pesto for leftover greens, served with stout!

Also do a veggie & vegan version of this AirBnb Irish breakfast: roast potato bites in paprika & garlic, roast tomatoes with chilli oil & smoked salt, bacon, sausages, sautéed spinach in white pepper, butter & nutmeg, love-heart fried egg with seaweed. They also ate four slices of toast with butter!

Yeah, my Ma said that too, a chicken at Easter. I just think we need to.grow beyond 'cruelty for protein' or at least be aware of the processes behind what we eat (and why we're getting sicker younger, all over again). People are strategically blind. I haven't eaten meat since 1988 though 🐟 still.

Impromptu trip yesterday to beautiful #Howth, then back to #BullIsland bird sanctuary, amidst talk of brown bears, UFOs over Colorado, art and a host of other warped nuggets. Then gorgeous lunch at #TheGravediggers, cemetary, #Botanics; home for liqueur and early night. Pretty much, the perfect day.

Nothing beats a bowl of homemade #guacamole for lunch. I make mine by smashing two 🥑 + juice of half a lime (stops it browning); then add good pinch of seasalt, 5 cut cherry tomatoes, 1 small chopped red onion, chilli flakes, fresh coriander & rest of lime at end. Blanco Nino blue tortilla chips. 😋

It’s hard to comprehend how vast the resources are that are being poured into genAI, and the environmental cost that comes with it. So I’ll ask (again): If genAI disappeared today, what would we lose that is worth this world-changing quantity of resources? No ‘some day’ crap, I mean right now.

That's a mass grave for Clew Bay drowning, June 14, 1894, when 32 seasonal workers from Achill Island drowned when an overcrowded boat capsized. They were mostly teenagers going to Scotland to pick spuds. On past there is pirate queen Granuaile’s Tower, then Atlantic Drive, ropey curly cliff drive.
