Day three is when the magic happens After two cycles of "boil, add sweetener, boil, sit overnight," on day three I add lemons and boil (again!). This lowers the pH (juice), adds pectin into the preserves (pith) and gives it a subtle lemon flavor. Then I add the secret ingredient (it's salt)
